Chouriço Sausage

Chouriço is a term for a smoked pork sausage spiced with paprika, ground pepper and other herbs.  Chouriço sausages are quite distinctive from their red colouring, which is a result of the pimento.

Unlike the Spanish version, where ingredients are ground, the meat in Portuguese Chouriço is chopped and gives a more rustic texture.

The Chouriço sausage is served sliced as an entree at many cafes and restaurants. However it is also a major ingredient in many Portuguese soups including Caldo Verde and Sopa de Pedra (soup of the stone).

In many adegas in Central Portugal, Chouriço is still served in a bowl of alcohol. The liquid is ignited and while you sample the local wine, the sausage slowly cooks.
