Barbecue Chicken Piri Piri Gekkoportugal

Chicken (Frango) is a staple of any Portuguese diet and there are hundreds of recipes devoted to the delicious foul.

 

However in Portugal the most popular is cooked on the 'churrasqueira' or barbecue, marinated and spiced with Piri piri, a hot spicy sauce.

 

While there are many take away restaurants selling frango com piri piri, why not try it out at home? The recipe below is a quick and easy one to get you started.

Frango Piri Piri - the recipe

Ingredients:

 

150ml (1/4 pint) olive oil

2tbs lemon juice

3 tbs Piri Piri

8 Skinned Chicken Drumsticks (or breast)

Preparation

Mix all the marinade ingredients in a bowl then score the chicken using a sharp knife.  Pour the marinade mixture over the chicken and store in the fridge for at least two hours. For best results leave the chicken over night.

 

Cook the chicken pieces on the barbecue for 25-30 minutes, turning and basting occasionally with any remaining marinade.
